Farm Fresh Summer Recipes

Summer means grilling outside! Farm fresh fruits, veggies and meats means the peak of flavor in every meal. This week let’s grill up some kabobs!
Meat and Veggie Kabobs
You pick your favorite meat whether it is shrimp, fish, chicken or steak. I like to marinade with my favorite dressing of balsamic vinaigrette and a little vinegar over night.
Cut chicken, steak, fish or shrimp into bite site portions just right for a skewer. To stop wooden skewers from charring soak in water for a half hour while you finish marinade.

Marinate in your favorite dressing. Here is mine:
1/4 cup olive oil
2 tablespoons balsamic vinegar
Salt and pepper
Cut vegetables into bite-size pieces. Use the local farms freshest picked veggies: bell peppers, onions, mushrooms, summer squash, zucchini – you name it! .
Grill kabobs directly over heat source for about 10 to 15 minutes, turning 1/4 rotation every 2 to 3 minutes, or until the meat and/or fish is cooked throughout. What a quick and easy main dish to serve your cookout guests!And it’s a fun way for you to get in your veggies!

Avocado Salsa
As a flavorful side dish make some wonderfully fresh salsa to be eaten with nacho chips or on their own.
Dice two avocados, three tomatoes, and a vidalia onion – put in a bowl. Add cilantro and ground cumin to your liking. Squeeze half a lemon over the entire bowl. Chill in refrigerator for a half hour then serve! Enjoy!
