Cool Summer Salads

Now that the heat of summer is really upon us cooking for dinner is becoming a chore.  Why not cool it down with some easy salad recipes! Use veggies that are in season to make your recipe super fresh!

Broccoli Salad – One of my favorite veggies!  This is a yummy summer salad that uses an interesting combination of fruits, vegetables and meats.  Read More about broccoli salads at AllRecipes.

  1. Ingredients – 2 heads of fresh broccoli, 1 red onion, 1/2 pound bacon, 1/2 C raisins. 1 C walnuts, 1/2 C Almonds, 1/4 cranberries. 1C Mayonnaise, 1/2 C white sugar, 2 tbs of white wine vinegar
  2. Directions -Cook bacon in a deep skillet over medium high heat until evenly brown. Cool and crumble. Chop the broccoli into bite-size pieces and cut the onion into thin bite-size slices. Combine with the bacon, raisins, walnuts, cranberries and favorite nuts. Prepare the dressing, mix the mayonnaise, sugar and vinegar together until smooth. Stir into the salad, let chill and serve.

Corn and Heirloom Tomato Salad  This colorful and flavorful salad uses so many wonderful fresh from the farm vegetables.

  1. Ingredients – 4 Ears of corn, 2 tbs olive oil, 1 red bell pepper, 1 orange bell pepper, one green bell pepper, 1 pint of heirloom tomatoes, 1 small onion (red), mixed salad greens 4-6 oz, balsamic vinegar.
  2. Directions – Cook ears of corn either on the grill in their husks or on the stove top until desired tender, Place red and yellow bell pepper on the grill and roast until the skins are blistered and lightly charred, turning often, about 15 minutes. Remove corn and bell peppers and let cool. Cut the kernels from the cobs and place into a large bowl. Peel skins from bell peppers, seed, and cut the peppers into 1-inch pieces; mix peppers and corn together. Lightly toss with heirloom tomatoes, red onion, and basil. Cover and refrigerate until serving time. Right before serving mix in salad greens and top with olive oil and vinegar.  Add salt and pepper to liking.
